My very first post is beef fajitas. I got the inspiration for fajitas after finding them on "101 cooking plus two". This recipe only took about 30 minutes to cook.
For this recipe you will need the following:
2 lb. of sirloin steak
2 green bell peppers
2 red peppers
2 large onions
For the Marinade you will need:
1/2 cup lime juice
2/3 cup water
3-4 crushed cloves of garlic
4 Tablespoons olive oil
2 teaspoons Kosher salt
1 teaspoon chili powder
1 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/2 onion powder
For the cooking hardware you will need:
A Cast Iron Skillet
1/4 & 1/3 measuring cup
1 tablespoon (not pictured)
1 teaspoon
1/2 teaspoon
2 knives (one for meat & other for veggies)
- Trim off the fat of the beef and cut remainder in 1/4 inch strips
- Add all the marinade ingredients together and put them in an airtight ziplock bag or container. What I did was spilt the marinade in half and put 1 pound of steak in each bag. Let marinade set for at least 2 hours. I let mine marinate overnight.
- When it is time to eat slice up your peppers and onions
- Add 1-2 Tablespoons of oil in a cast iron
skillet set to medium. When the oil is hot add the peppers and onions.
Cook for 10-12 minutes or until onions are nice and brown and peppers
are soft.
*Completely optional: add a few tablespoons of the marinade to the beginning to give it some extra flavor. - Next, remove the steak from the marinade and add them to the skillet. Turn the heat up to medium high. If needed drain some of the marinade out of the cast iron skillet but do so carefully. Cook steak for 8-10 minutes or until meat is well done.
- Once the steak is done re-add the peppers and onions to the skillet to reheat them.
- Serve with warm tortillas. Add your favorite toppings as well - cheese, sour cream, guacamole, salsa, the list goes on.
